Shun Classic Knives Review

i’ve been hunting for a reasonably-priced but super high quality set of chef’s knives. the set i have is too worn and low quality to hold a proper edge, and i left my really nice set of high-carbon wustofs at my parents’ house when i moved to LA.

the kyocera kyotop damascus knives are super sexy with their damascus blade patterning, classic handles, and uber-cool ceramic blades, but i just can’t get over the fact that you can’t whack on a clove of garlic with flat of the blade because of the brittleness of the ceramic! oh, and a set will run you $1000 – $1500. :(

globals knives, on the other hand, are the top-quality molybdenum/vanadium stainless steel knives highly regarded within professional chef circles. the metal and sharpening taper are purported to allow the blades to keep their sharpness longer than comparable high-carbon steel german knives. even anthony bourdain recommends them in his book “kitchen confidential!”

usually $520 for a set of 6, but can be purchased from sellers on amazon for $450. BUT, i found them from a wholesaler in OZ on ebay for $135!!!

this is the perfect set for me, because it has exactly the mix of knives i wanted (santoku, chef’s, serrated bread, paring, etc.). the seller has a couple larger and smaller sets with different mixes to suit your preferences.
